Peruvian Purple Corn is a vigorous grower and produces large 3.6m, sturdy stalks. About 90 days to maturity. This maize produces stunning dark purple (nearly black) kernels, which can be ground into flour for corn breads, flat bread, pancakes, waffles, tortillas, purple corn mush, or anything you would use corn meal or corn flour in. Peruvian Purple Corn is grown in the valleys of the Andes Mountains. It has a long history of use, especially for its health benefits; it is used to lower cholesterol levels and fight obesity. Peruvian Purple Corn is a good source of antioxidant phenolic acids and is the main ingredient in “Chicha Morada”. Whole kernel maize should be stored in a cool dark place. It is best to only grind the amount needed. Once ground, any whole grain flour will turn rancid in four to five days (because all of the natural oils and materials found in the grain are still in the flour) at room temperature.
