Orach Red Flash (also known as Mountain spinach) is a species of plant in the amaranth family. It is used as a leaf vegetable and is grown in warm weather as an alternative for the cold season spinach crop. Orach Red Flash is a hardy annual plant, with an erect branching stem. It grows to heights of between 60-180 cm tall, depending on the soil it is grown in. The leaves are variously shaped but somewhat oblong, comparatively thin, and slightly acidic to the taste. The flowers are small and obscure, greenish or reddish, corresponding to a degree with the colour of the foliage of the plant. The seeds are small, and they can retain their viability for three years. The seeds are also edible and is a source of Vitamin A. They are ground into a meal and mixed with flour for making bread.
Orach has a mild chard-like flavour but tastes saltier than most greens as the minerals from the soil are stored in the plant's leaves.
